Brocolli & Apple Salad

This is just a quickie post today. The recipe is also a quickie, and another one of hubby’s favorite salads. I think the original recipe came from A Taste of Home, but as usual, I’ve tweaked it a bit.

Broccoli & Apple Salad




Ingredients:

1 broccoli crown cut into florets
1 Fuji apple, cored and chopped
2 tablespoons lemon juice
¼ cup red onion, chopped
½ cup plain yogurt
A handful of raisins
A handful of chopped walnuts

Directions:
  • Put apple in a salad bowl and drizzle with lemon juice.
  • Add broccoli, onion and yogurt, and toss to coat.
  • Top with raisins and walnuts.

Great quickie post! I love broccoli salads and this one is great! Fugi apples are my favorite kind of apple, and I'm lucky that they are easy to get here. I bet this salad has a lot of *crunch*!
